Lemon and honey cake - no flour!

We don’t know about you, but we won’t wait for the weekend to make this dessert! A healthy and simple recipe for a gluten-free cake, rich in protein, and the combination of honey, lemon, and almonds seems completely irresistible to us.

Lemon and honey cake - without flour
The main stars of the cake are LEMON, HONEY, and ALMONDS. It is made very quickly, and it is so soft and tasty, that it melts in your mouth.


  • 250 g honey,
  • 60 ml of lemon juice,
  • 60 ml of olive oil,
  • 4 eggs,
  • 350 g of almond flour or finely ground almonds (I ground it in a mincer),
  • 1/2 pack of baking powder
  • for serving: Greek yogurt, honey, and lemon



Put honey in a bowl, then add eggs and beat with a wire (not a mixer) just to even out. Chop the almonds as much as possible (when they start to stick to the walls of the chopper/blender and look like flour, then it is ok to grind) and mix in 1/2 of the baking powder. 

Add lemon juice and olive oil to the mixture with honey, and then the mixture of almonds. Mix everything nicely and pour into a mold, in which you put baking paper.

TIP: Wet the paper freely and squeeze it well and then shape it nicely according to the mold
Bake the cake for 40 minutes at 160 degrees. Remove, leave to cool nicely, then serve alone or with Greek yogurt, honey, and lemon cream (mix 1 Greek yogurt, 1 tablespoon of honey, and 1 tablespoon of lemon juice).
